Directions
VIEW STEP BY STEP
1.
Dust roast with pan-searing flour; pat off excess. Heat oil in large braising pan on
MED-HIGH, until oil faintly smokes.
2.
Add roast, turning to brown all sides, about 2 min per side. Remove roast; place
in slow cooker. Discard all but 1 Tbsp drippings from pan.
3.
Add mirepoix and garlic to pan; cook, stirring, 2 min. Add wine, stirring to loosen
browned bits on bottom of pan. Cook 2 min, until liquid is reduced by one-third
to syrupy consistency. Add stock; bring to simmer.
4.
Pour stock mixture over meat in cooker. Add tomatoes, sauce, and rosemary; stir
to mix slightly.
5.
Cover; cook 4-5 hours on HIGH or 6-8 hours on LOW. Transfer chuck roast to
serving platter. Season with salt and pepper. Pour sauce over chuck roast and
serve.

Good flavor!
I was nervous to make this roast in the oven as I usually use a crock pot for roasts. But
the flavor the tomatoes, wine and rosemary give the beef is wonderful. Not quite as
tender as the crockpot but still very good. Would make again.

Amazing
This recipe produces an absolutely delicious meal. I wish I could double it but my crock
pot isn't big enough! It makes the house smell wonderful; I just can't say enough good
things about it.

Good recipe!
This is a great recipe, although I prefer to buy the vegetables at Wegman's and prepare
them myself. Tasty and valuable!
